Passito is a sweet, liqueur-style wine made from dried grapes—grapes that are left to wither on the vine or dried after harvest. It has a long history and is deeply rooted in ancient traditions and production techniques.The drying process concentrates sugars and acids, creating a rich and intense wine. The production of our “Nerodolce” requires passion and dedication, expressing a profound love for both wine and the land, while evoking memories and reflections. The name of our passito, in particular, conveys a sense of mystery and allure. The combination of “dark” and “sweet” creates an intriguing contrast, suggesting something deep and enveloping, powerful and captivating.

Explore the rich and enveloping character of our Sweet Red Wine, grown on the fertile slopes of Mount Etna. With notes of dried grapes, dark chocolate and vanilla, this wine is the perfect companion to desserts, especially those made with Modica chocolate and Etna hazelnuts.   • Training system: Vertical trellis system, with a vine density of 6,000 plants per hectare; average vine age 25 years. Biodiversity-based agriculture
  • Climate: Insular Mediterranean climate with day–night temperature variations
  • Harvest: Last ten days of October
  • Vinification: Traditional fermentation at controlled temperature with approximately 20 days of maceration. Gentle manual racking
  • Ageing: 1 year in bottle

  • Aroma: Intense aromas of dried grapes, dark chocolate, vanilla, dried fruit and dried figs
